Walnut bread
The walnut tree is the focal point of many farms. Its nutritious nuts can be used to make a delicious breakfast bread.

Ingredients
makes 10 rolls

- For the yeast starter:

200 gfine wheat flour

ca. 100 mllukewarm water

ca. 1 gfresh yeast

wholemeal rye flour

fresh yeast

Instructions - Walnut bread

1.
StepFirst prepare the yeast starter. Stir 1 g of yeast in 100 ml water into 200 g wheat flour. Allow it to mature at approx. 24° C for at least 5 hours, even better 10 hours. -
2.
StepPut the remaining flours in a bowl and dissolve the yeast and sugar in water, stir the mix into a well in the flour and allow it to rise for 15 minutes. -
3.
StepAdd the walnuts, salt and yeast starter and beat vigorously for 10 minutes. -
4.
StepCover the dough and allow to rise for 30 minutes. -
5.
StepShape into 10 longish sausages on a floured work surface and place on the baking sheet. -
6.
StepAllow the rolls to rest for another 20 minutes before baking at 200° C for 20 minutes. -
