Dandelion egg salad
Dandelion leaves are also known as "Zigori" in South Tyrol. This salad is a delicious example of green South Tyrolean cuisine.

3 Handfulfresh, young dandelion leaves

2small potatoes

1small onion
-
4hard-boiled free-range eggs

salt, pepper

2 dspnapple vinegar

2 dspnolive oil
Instructions - Dandelion egg salad

StepBoil potatoes in salted water, peel and cut into thin slices while still warm. -

StepCarefully wash dandelion leaves, pat dry and chop. -
3.
StepPeel onion and chop finely. -
4.
StepMix all ingredients together and marinade with salt, pepper, vinegar and oil. -
5.
StepPeel and halve the hard-boiled eggs and serve with the dandelion salad. -
