Dandelion leaves are also known as "Zigori" in South Tyrol. This salad is a delicious example of green South Tyrolean cuisine.

    fresh, young dandelion leaves
  • 2
    small potatoes
  • 1
    small onion
  • 4
    hard-boiled free-range eggs
  • salt, pepper
  • 2 dspn
    apple vinegar
  • 2 dspn
    olive oil

Instructions - Dandelion egg salad

    Step
    Boil potatoes in salted water, peel and cut into thin slices while still warm.

    Carefully wash dandelion leaves, pat dry and chop.

    Peel onion and chop finely.

    Mix all ingredients together and marinade with salt, pepper, vinegar and oil.
