Dumplings & oyster mushrooms

Potatoes from the field, spinach from the garden and delicious mushrooms: a nice recipe to enjoy on special occasions.

  • For the cams:
  • 500 g
  • 200 g
  • 2 dspn
  • 1 1/2 tsp
  • 2
    free-range egg yolks
  • 2 dspn
    parmesan cheese
  • a little flour
  • For the sauce:
  • 300 - 500 g
    king oyster mushrooms
  • olive oil
  • salt
  • a little white wine
  • a little cream
  • parsley
  • pepper

    Instructions - Green potato dumplings with king oyster mushroom
    • circle-dashed 1.
      Peel and chop the potatoes and boil them in salted water. Throw in the spinach towards the end and cook briefly with the potatoes. Drain, mash using a potato ricer and allow to cook.

      Work the butter, nutmeg, egg yolks and parmesan into the potatoes to form a dough.

      Add enough flour to make a medium firm dough.

      Form little dumplings from the dough and drop them into a pan of boiling water. As soon as they come up to the surface, remove them with a slotted spoon.

      Brown the mushrooms in olive oil, season and deglaze the pan with white wine. When the alcohol has evaporated add a little more water and allow it to reduce. Finally add some parsley and cream to enrich the sauce.
