Sort the raspberries carefully, removing any leaves and stems.
DO NOT wash the raspberries as this will cause them to lose their flavour.
Put all the ingredients in a saucepan and simmer gently for 5 minutes.
Allow the compote to cool and serve.
If necessary, you can thicken the compote with a little cornflour. Other ingredients such as vanilla, lemon or rum can be used to perfect the flavour. This compote is served with vanilla ice cream to make the classic “Heiße Liebe” (“hot love”).
