Potato fritters with cabbage

In this superb farmer's dish from the Pustertal Valley, sauerkraut is combined with a fried potato dough.

    floury potatoes
  • 2
    egg yolk
  • 2 dspn
    melted butter
  • 400 g
    flour
  • 1 Pinch
    salt
  • oil for frying
  • 500 g
    cooked sauerkraut

Instructions - Potato fritters with cabbage

    Step
    Boil and mash potatoes and allow to cool.

    Step
    Knead egg yolk, melted butter, flour and salt to a dough.

    Step
    Roll out dough until around 2mm thick, cut out round sheets and lay on a cloth. Fry dough sheets in hot oil until golden brown.

    Drain well on kitchen paper and serve hot with sauerkraut.
