Knowing where it's from
The fruit for the distillery comes from the farm's own fruit and wineries. Because Martin Rastner grows everything himself, he decides which fruit is best to harvest at what time. He patiently waits for maximum maturity. This is the only way he can get the maximum aroma out of the fruit during the distillation.
