In South Tyrol, classic apple strudel is usually made with good-quality, rich shortcrust pastry, and sometimes with filo or puff pastry. And the filling? There are lots of options: with or without raisins or with or without pine nuts. You can use several different apple varieties. Golden Delicious is the most popular, but Gala or Pink Lady are also suitable for the filling. An absolute must is a pinch of cinnamon and a dusting of icing sugar on the top. All strudels have one thing in common: the ingredients come from the farm and are made by farmwomen.
