  • For the dumplings:
  • 1 kg
    potatoes (floury)
  • 220 g
    flour
  • 50 g
    wheat semolina
  • 1 Pinch
    salt
  • 1
    free-range egg
  • 30 g
    butter
  • 18
    plums
  • For the toasted breadcrumbs:
  • 200 g
    white breadcrumbs
  • 100 g
    butter
  • sugar and cinnamon to taste

    Instructions - Plum dumplings

      Step
      For the potato dough, wash the potatoes and cook them unpeeled until soft.

      In the meantime, wash the plums and let them dry (removing the stone is optional).

      Allow the boiled potatoes to cool down a little, peel them and mash them using a potato ricer.

      Work into a dough with the flour, semolina, salt, butter and egg on a floured work surface.

      Roll out the dough and cut into squares.

      Place plums in the middle of the squares, wrap the potato dough around them and shape them into dumplings.

      Cook the dumplings in a steamer for 20 minutes.

      For the breadcrumbs: heat the butter in a pan, add the breadcrumbs, add sugar and cinnamon to taste and toast lightly.
