The farm
Obertimpflerhof farm lies nestling amidst the idyllic landscape of the Tschöggelberg plateau at an altitude of 1,280 metres. The farmer is particularly proud of the species-appropriate methods used to rear his pigs. Free range animals and GM-free, natural pig feed make for high quality meat, which is then processed into 'speck' and sausages by hand on the farm. Tours of the farm followed by a light snack may be arranged on request.

Knowing where it's from
The pigs born in South Tyrol feel completely at home in the barn of the Obertimpflerhof and on the pasture. Because they are kept free, they can enjoy the fresh mountain air and exercise whenever they want. The stress-free husbandry and the GMO-free feed of purely vegetable origin ensure the excellent meat quality.

Processing
After a slaughtering process that is gentle on the animal, the meat is cut up and processed on the farm. The use of nitrite curing salt is completely avoided. Traditional smoking involves working with a lot of air and little smoke. After smoking, the bacon matures in the natural maturing cellar for up to a year. Kaminwurzen and salami are air-dried in the stone cellar. A light smoking with juniper berries gives them a special taste.
