Hochgruberhof farm, set at 1,650m above sea level, is one of the highest-lying mountain farms in Mühlwald valley. The family particularly care about their cattles' species-appropriate rearing and feeding. The hay milk from Pinzgau cattle is carefully turned into different types of cheese by hand on the farm. The natural rind and unmistakeable taste mean that the cheese is a popular quality product.

Knowing where it's from

Here we draw from the treasures of nature. 15 Pinzgau dairy cows, reared as calves with cow's milk, fortified with herbal feed and spring water and protected by homeopathy and herbal incense. This is how the Oberhollenzer family gets the best hay milk, which they process fresh every day into delicious milk products.

Processing

Nature also sets the tone when it comes to processing. Natural calf rennet and a special lactic acid culture are added to the fresh raw milk. The cheese matures on natural spruce boards in the specially made stone cellar. Here it is in the ideal climate and can fully develop its potential.
