A whole range of wild green herbs grow around the farm in spring, which provide you with important vitamins after the cold winter months.

    puffed up bladder campion
  • 1-2 Leaves
    leaves each of yarrows, ground ivy, dandelion, raspberry leaves, lady's mantle, garlic mustard, ribwort plantain, broadleaf plantain, Persian speedwell and wood sorrel
  • Other:
  • Finely chopped stinging nettle leaves and a little buttonwort
  • To serve:
  • 1-3
    ribwort flowers (still completely closed, mushroom-like flavour)
  • 1 handful
    edible decorative flowers depending on the season (dandelions, daisies …)
  • herb salt
  • lemon juice
  • a little olive oil

    Instructions - Wild herb salad

      Wash all the herbs. Chop if necessary and arrange on a plate.

      Dress the salad with herb salt, lemon and olive oil.

      Tip: You can also use herbs and leaves from your garden for the salad.
