The farm
Viticulture has a particularly long history at the Raßlhof. "Our family has been producing wines in harmony with nature and according to old family tradition since 1889," explains winemaker Walter Gamper. With a vineyard area of 1.5 hectares, the farm is also one of the smallest producers of DOC wines in South Tyrol. The wines are characterised by their very traditional character.

Knowing where it's from
The Gamper family cultivates around 1.9 hectares of vineyards in Tramin. Each wine is cultivated on suitable soils. Gewürztraminer grows on red clay soil, Lagrein on warm, permeable soil, Cabernet in the best red wine location and Pinot blanc on a south-facing slope. Farmer Walter has been converting the farm to an organic wine-growing business since 2014.
Processing
In the farm wine cellar, the fresh grapes are destemmed, pressed and fermented under controlled conditions. White wines are cold fermented between 16 and 18 degrees Celsius to preserve their fruity flavour. Red wines, on the other hand, are fermented with the skins before being pressed. They achieve maceration times of between 7 and 8 hours at around 25 to 30 degrees Celsius.
