The farm
Hof zu Fall is located at the foot of the Schlern at 1,250 metres above sea level in Kastelruth. Farmer Joachim and his wife Michaela refine the farm's own milk into delicious raw milk cheese and yoghurt. The cows of the South Tyrolean 'Grauvieh' breed can move freely in the enclosure and enjoy mountain meadow fodder. "Close to nature and with enthusiasm - that's how we produce our cheese", says farmer Joachim.

Knowing where it's from
Cattle from the 'Grauvieh' breed at kept in a large enclosure at Hof zu Fall. In winter they eat hay, while they spend summer on the Seiser Alm pasture or in the meadows next to the farm and enjoy eating the tasty grass.

Processing
The raw milk is turned into cheese in Joachim's dairy. The cheese ripens for between 4 weeks and half a year to develop its excellent quality in the ripening room.
