The farm
The Kafmann family have created a paradise for themselves at an altitude of 1,550 m and breathe in mountain air all year round. Surrounded by numerous animals, the dairy farmer produces a wide variety of cheese from April to October using only fresh milk from the Tyrolean ‘Grauvieh’ breed. These horned cattle get exercised nightly and produce high quality milk as a result, creating ideal conditions for excellent cheese.

Knowing where it's from
The milk for the cheese is supplied by the farm's own Grauvieh cattle. They have a nice life here and spend a full seven months from April to October on the pasture. This also contributes to high milk quality and thus tasty cheese.
Producing the best milk for high-quality cheese
Processing
Cheese is only produced on the Hagneralm between April and October. The purest hay milk is processed without thermal treatment. There is no silage at all.
