Thanks to its pleasant climate and multi-altitude terrain, South Tyrol's farms grow a wide range of produce. Fruit and vegetables are harvested at just the right time. When the colour is most vibrant, the aroma the strongest and the taste the most intensive, it's the right moment to cook up raw ingredients. South Tyrol's farms feature animal products, too. Farmers that mainly work steep terrain under challenging conditions produce meat and milk from their cattle, sheep and goats. Cereals, eggs and unusual types of herb and mushroom also make up the variety of produce available in South Tyrol.

 

In harmony with the seasons

In summer and autumn, every day results in a rich assortment of produce from the vegetable garden to pick and choose from. Anything left over is preserved in jars for the winter and stored next to vegetables that keep well in the larder. In spring, when the soil softens and the larder starts to look empty, green shoots such as chicory, bear's garlic and lettuce become the stars of the kitchen. Meat dishes from young animals also feature in traditional cooking at this time of year.
