Swiss roll

Quick and easy to make. Filled with good jam, this cake is the perfect accompaniment to a cup of coffee.

    egg yolks
  • 100 g
    sugar
  • 6 dspn
    hot water
  • vanilla, lemon zest
  • 6
    egg whites
  • 1 Pinch
    salt
  • 100 g
    flour
  • 30 g
    potato flour
  • 250 g
    cream
  • fresh berries or jam
  • 1 Pinch
    sugar to taste
  • a little lemon juice

Instructions - Swiss roll

    Step
    Pre-heat the oven to 200° C fan.

    Beat the egg yolks, 50 g sugar, vanilla and lemon until creamy.

    Then beat the egg whites with the rest of the sugar to stiff peaks.

    Beat in a little of the egg white to the egg yolk mixture. Then carefully fold in the rest.

    Finally gently fold in the sifted flour / potato flour mixture.

    Spread evenly on the baking sheet and bake in the preheated oven for about 10 minutes - until the surface is golden.

    Allow the sponge to cool.

    Whip the cream.

    If you like, season the fresh berries with a little sugar and lemon juice.

    Spread the whipped cream evenly over the cooled sponge, top with the berries and roll up.

    Dust with icing sugar and enjoy!

    Tip: In winter, when there are no fresh berries in the garden, simply spread some jam made from summer berries over the sponge. Equally tasty!
